Seoyeon Jang also shares what she imagines Eunice felt when saying that "I love you"

NetflixNo matter where your allegiance lay at the end of Beef Season 2 — with the millennial couple Josh (Oscar Isaac) and Lindsay (Carey Mulligan) or the Gen-Z pair Austin (Charles Melton) and Ashley (Cailee Spaeny) (though who even was on their side by the finale?) — you likely walked away with one glaring question in mind. The final minutes of "It Will Stay This Way and You Will Obey," the Season 2 finale of Lee Sung Jin's anthology series, give viewers a snapshot of where its characters are after an eight-year time jump. But Seoyeon Jang's Eunice, the interpreter and assistant of billionaire Chairwoman Park (Youn Yuh-Jung), is nowhere to be seen. Her absence begs the question: What happened to Eunice?
"I think she would have fled the country, the continent, you would never hear from her again," Jang told TV Guide ahead of a special screening for Beef Season 2 in New York City. "I think she would have changed her name, her age, everything about her, and just got into hiding. This girl fears for her life."
By the finale of Beef Season 2, Eunice was ready to betray Park and wanted to report her boss' crimes to authorities. Though she herself fled shortly after landing in Seoul, Eunice entrusted a USB drive that contained evidence against Park to Austin with the hope that he would give it to the police. And while the personal trainer considered doing the right thing, he ended up giving the USB to Park.

"I'm a bit sad about the outcome," Jang continued, saying that Austin's decision was "such a big letdown."
To be fair, he was initially on the way to the police station to report Park. It wasn't until a phone call with Eunice in which Austin said, "I love you" — and received a hesitant "I love you" back — did he do a literal 180 and headed to the Chairwoman instead.
Asked about what she imagined Eunice felt when saying those three words, Jang said that was something she discussed with showrunner Lee. "When we were doing ADR, we did record various versions," she recalled. "But I think the conclusion we came to was — Eunice is a character where, initially she may have fancied Austin, but business is business and we don't have time for this."
"Here's Austin trying to get emotional and say things in inappropriate timings. So I think Eunice clocked it, and maybe she wanted to use this in her favor."
